Alfredo Sauce Recipe

  • 1 1/2 cup whole milk
  • 1 1/2 cup heavy cream
  • 1/2 cup parmigiano-reggiano cheese, finely grated
  • 1/2 cup romano cheese, finely grated
  • 6 eggs
  • salt
  • freshly ground black pepper
  1. Separate the egg yolks from the whites and set them aside in a small bowl.
  2. Heat milk and cream in a large saucepan just until it begins to simmer. Turn off the heat.
  3. Add the parmigiano-reggiano and romano cheeses and whisk them into the cream until melted.
  4. Remove the pan from the heat. Temper the egg yolks by adding two and three large spoonfuls of the hot cream and cheese mixture to the egg yolks and whisking them together, raising the temperature of the egg yolks and preventing them from scrambling.
  5. Slowly add the egg yolk mixture to the cream and cheese mixture in small amounts and stir to combine.
  6. Return the pan to the burner and heat on low, stirring slowly, just until it simmers.
  7. Remove the pan from the heat. Allow the sauce to set until it thickens.
  8. Add salt and grown black pepper to taste.
  9. Serve this alfredo sauce recipe with tossed with fresh, hot pasta.
  10. Try different variations of this alfredo sauce recipe by adding three to four tablespoons of basil pesto or diced sun-dried tomatoes in oil after it thickens.
  11. Refrigerate leftovers in a sealable glass or plastic container.
  12. Adjust the number of portions in this alfredo sauce recipe by multiplying the amounts of each ingredient.
