Chicken Adobo Recipe

Had chicken adobo at your favorite restaurant and want a chicken adobo recipe that you can make at home? Chicken adobo’s flavor profile may seem complex, but it’s not at all difficult to make chicken adobo at home. Chicken adobo is a classic dish that is delicious and surprisingly simple to prepare.

To make chicken adobo you’ll need the following ingredients and tools:

  • 1 - 4 pound chicken
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 1/3 cup white vinegar
  • 2/3 cup of soy sauce
  • 1 tbsp. of freshly ground pepper
  • 1 whole bay leaf
  • 3 tbsp. of olive oil
  • 1 large stock pot
  • 1 spoon
  • 1 large knife
  • 1 can of lemon lime soda (optional)
  1. Prepare the chicken. Wash the chicken well and chop into pieces. If you don’t have a whole chicken on hand you can use four to five pounds of chicken pieces. Chicken thighs and other dark meat work particularly well in chicken adobo.
  2. Brown the chicken. In a large stock pot over medium heat, heat the olive oil and add the minced garlic and onions. Cook the garlic and onions until lightly brown and add the chicken pieces. Saute the chicken until it’s skin is browned and the meat is beginning to cook.
  3. Add the spices. Add your pepper, bay leaf, soy sauce and vinegar to the pot with the chicken pieces. Let the chicken adobo simmer over medium-low heat for twenty-five to thirty-five minutes.
  4. Serve. The finished chicken adobo should be tender and moist with a nice tangy flavor. If you prefer your chicken adobo a little sweeter, you can add a cup or two of lemon lime soda and simmer for an additional five minutes. Chicken adobo over white rice is a delicious lunch or dinner.
