The holidays are near and you want to eat something light during the day so why not try a Christmas lunch recipe that will leave you satisfied and keeps with the tradition of the holidays. Roast turkey and glazed ham are among the favorite foods for Christmas lunch of dinner but not everyone can afford to shell out that amount of money. Or say you just have a small party and want to keep things simple. We’ve got the perfect holiday styled recipe for you, Southern cornbread dressed-up chicken.

You will need the following ingredients & cooking items:

  • 4 strips thick-sliced bacon
  • 2 large thinly sliced onions
  • 1 teaspoon salt and freshly ground pepper
  • ½ teaspoon salt
  • 1 cup crumbled cornbread stuffing
  • 2 cups baby spinach
  • 1 cup grated sharp cheddar cheese
  • ¼ cup pecan pieces
  • 2 cloves minced garlic
  • 2 tablespoons dijon mustard
  • ¼ teaspoon freshly grated nutmeg
  • 2 chicken halves, backbone removed 
  • 2 tablespoons unsalted melted butter
  • 1 tablespoon honey
  • Oven proof skillet
  • Wooden spoon
  • 2 mixing bowls
  • Plate lined with paper towel
  • Roasting thermometer
  • Cutting board
  1. Preheat oven. Guys, anytime you’re about to bake something in the oven you always want to preheat it first. Set oven to 375 degrees for this Christmas lunch recipe.
  2. Cook bacon. Fry bacon without oil over medium heat in an ovenproof skillet. Make sure bacon is crisp, takes less than 10 minutes then place on top a paper towel over a plate or cutting board.
  3. Cook onions. In the same skillet over low heat cook onions with teaspoon of salt and pepperfor this Christmas lunch recipe. Cook onions until tender, using a wooden spoon. Set skillet aside. Turn off heat.
  4. Mix Ingredients. In a mixing bowl add cornbread stuffing, spinach, cheese, pecans, garlic, half the mustard, ½ teaspoon of salt and nutmeg. To add crunch to this Christmas lunch recipe you now take the bacon, crumble it and toss it in mixing bowl.
  5. Stuff the chicken. It’s now to get the party going! Stuff the poultry with the mixture of ingredients in between the skin and flesh; make sure to cover the breast and thigh.
  6. Prep the chicken. Place the chicken halves skin side up on top of the onions still in the skillet. For that sweet taste in this Christmas lunch recipe in another bowl mix melted butter and honey and then brush mixture on top of chicken. Add a little salt and pepper.
  7. Roast chicken. Place ovenproof skillet in oven until thermometer inserted into thigh reads 165 degrees, which will take about 50 minutes for this Christmas lunch recipe to be fully cooked.
  8. Let sit and serve. Take chicken out of oven, turn oven off. Place chicken on cutting board while you take the last part of mustard and mix it with the onions in the skillet. For this Christmas lunch recipe you must let the chicken cool 10 minutes before carving, then serve with onions. Yummy!
