Diabetic Cake Recipes

1. Birthday Cake Recipe (Diabetic Cake)
- 1 1/2 cups all purpose flour
- 3/4 cup sugar substitute for baking
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 cup sour skim milk (milk + 1 tbsp vinegar)
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- Combine flour, sweetener, baking soda and salt in bowl.
- In another bowl combine egg, sour milk, vegetable oil and vanilla, stir well.
- Slowly mix together wet and dry ingredients a little at a time until incorporated, but not over mixed.
- Pour into a greased and floured cake pan.
- Bake at 350 degrees for 20-25 minutes.
- Cool on rack.

2. Marble Cake Version (Diabetic Cake)
To make a marble cake version of the above cake, you will need:
- Ingredients same as above
- 1 tbsp cocoa powder
- After all ingredients are mixed (Step 3 above), remove 1/4 cup of batter.
- Add 1 tbsp cocoa powder and mix well.
- Pour cake mix in greased and floured pan.
- Spoon chocolate mixture randomly over cake batter.
- Swirl chocolate mixture with a butter knife to marble the cake.
- Bake at 350 degrees for 20-25 minutes.
- Cool on rack
Whipped Cream Icing
- 1 container of imitation whipped cream topping
- 1 package sugar free pudding mix
- 1 cup milk Mix pudding mix and milk, set aside.
- Whip using a hand beater, whip topping until it form peaks.
- Add pudding mixture and beat well.
- Spread over cake and enjoy.
- Refrigerate leftovers.
3. Blueberry Coffee Cake (Diabetic Cake)
- 3/4 cup butter, melted and cooled
- 1 cup milk
- 3 eggs
- 1 tsp vanilla extract
- 1 1/2 cups Splenda sweetener
- 2 tsp baking powder
- 3 cups all purpose flour
- 1 3/4 cups fresh or frozen blueberries
Crumble Topping
- 1 1/2 cups brown sugar substitute
- 3/4 cup flour
- 2 tsp ground cinnamon
- 1/2 cup butter softened
- Combine butter, milk, eggs, and vanilla. Mix well.
- Stir flour, baking powder, and sweetener together.
- Add wet ingredients slowly into dry, mix until just combined.
- Fold in the blueberries.
- Pour batter into a 9x13", greased and floured pan.
- In a small bowl blend, brown sugar substitute, flour, cinnamon and butter, until crumbly.
- Sprinkle over cake batter.
- Bake at 350* for 35-40 minutes.
Serve warm.
4. Sponge Cake (Diabetic Cake)
- 7 eggs
- 1/2 cup orange juice
- 2 tbsp lemon juice
- 3 tbsp sweetener
- 3/4 tsp cream of tarter
- 1/4 tsp salt
- 1 1/2 cups sifted cake flour
- Separate eggs.
- Beat egg whites with salt until foamy.
- Add cream of tarter and beat until stiff
- Combine orange juice, lemon juice, sweetener and flour. Blend well
- Fold in egg white mixture. Do not over stir.
- Pour batter into a greased and floured bundt pan.
- Bake for 40 minutes.
- Serve with whipped cream and fresh berries.
