1. Birthday Cake Recipe (Diabetic Cake)

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar substitute for baking
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 cup sour skim milk (milk + 1 tbsp vinegar)
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  1. Combine flour, sweetener, baking soda and salt in bowl.
  2. In another bowl combine egg, sour milk, vegetable oil and vanilla, stir well.
  3. Slowly mix together wet and dry ingredients a little at a time until incorporated, but not over mixed.
  4. Pour into a greased and floured cake pan.
  5. Bake at 350 degrees for 20-25 minutes.
  6. Cool on rack.

2. Marble Cake Version (Diabetic Cake)

To make a marble cake version of the above cake, you will need:

  • Ingredients same as above
  • 1 tbsp cocoa powder
  1. After all ingredients are mixed (Step 3 above), remove 1/4 cup of batter.
  2. Add 1 tbsp cocoa powder and mix well.
  3. Pour cake mix in greased and floured pan.
  4. Spoon chocolate mixture randomly over cake batter.
  5. Swirl chocolate mixture with a butter knife to marble the cake.
  6. Bake at 350 degrees for 20-25 minutes.
  7. Cool on rack

Whipped Cream Icing

  • 1 container of imitation whipped cream topping
  • 1 package sugar free pudding mix
  • 1 cup milk Mix pudding mix and milk, set aside.
  1. Whip using a hand beater, whip topping until it form peaks.
  2. Add pudding mixture and beat well.
  3. Spread over cake and enjoy. 
  4. Refrigerate leftovers.


3. Blueberry Coffee Cake (Diabetic Cake)

  • 3/4 cup butter, melted and cooled
  • 1 cup milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups Splenda sweetener
  • 2 tsp baking powder
  • 3 cups all purpose flour
  • 1 3/4 cups fresh or frozen blueberries

          Crumble Topping

  • 1 1/2 cups brown sugar substitute
  • 3/4 cup flour
  • 2 tsp ground cinnamon
  • 1/2 cup butter softened
  1. Combine butter, milk, eggs, and vanilla. Mix well.
  2. Stir flour, baking powder, and sweetener together.
  3. Add wet ingredients slowly into dry, mix until just combined.
  4. Fold in the blueberries.
  5. Pour batter into a 9×13", greased and floured pan.
  6. In a small bowl blend, brown sugar substitute, flour, cinnamon and butter, until crumbly.
  7. Sprinkle over cake batter.
  8. Bake at 350* for 35-40 minutes.

Serve warm.

4. Sponge Cake (Diabetic Cake)

  • 7 eggs
  • 1/2 cup orange juice
  • 2 tbsp lemon juice
  • 3 tbsp  sweetener
  • 3/4 tsp cream of tarter
  • 1/4 tsp salt
  • 1 1/2 cups sifted cake flour
  1. Separate eggs.
  2. Beat egg whites with salt until foamy.
  3. Add cream of tarter and beat until stiff
  4. Combine orange juice, lemon juice, sweetener and flour.  Blend well
  5. Fold in egg white mixture. Do not over stir.
  6. Pour batter into a greased and floured bundt pan.
  7. Bake for 40 minutes.
  8. Serve with whipped cream and fresh berries.
