Diabetic Fudge Crispy Rice Treat

Ingredients:

  • ¼ cup light margarine
  • 1 1/3 cups powdered milk
  • 2/3 cup cocoa powder
  • 1 cup artificial sweetener
  • 1/3 cup evaporated non fat milk
  • 2 teaspoons vanilla
  • 1 cup crispy rice
  • ¼ cup raisins

Directions:

  1. Mix margarine and non-fat powdered milk until crumbly. Then add cocoa powder and artificial sweetener. Mix diabetic candy until blended.
  2. Add evaporated milk and vanilla to the mixture. Mix until it is almost smooth and sticky.
  3. Remove the mix from the bowl and mix in crispy rice with hands. Continue mixing with hands until diabetic candy fudge is smooth and shiny.
  4. Shape fudge crispy rice treats into two ten-inch long rolls. Wrap diabetic candy in clear plastic wrap. Place in refrigerator and chill until firm.
  5. To serve: cut diabetic candy treats into ½ inch thick slices. Serves 30. Store diabetic candy in refrigerator.

Puppy Chow

Ingredients:

  • ¼ cup olive oil
  • 8 cups corn cereal
  • 1 ½ cups semi-sweet chocolate chips
  • 2 cups non fat dry milk powder
  • 1 cup artificial sweetener
  • 2 cups cornstarch

Directions:

  1. Add semi-sweet chocolate chips to a large pan, and add the olive oil. Stir until melted
  2. Pour corn cereal into a bowl. Pour chocolate mixture over corn cereal and fold until it is completely distributed.
  3. Mix the nonfat dry milk, cornstarch, and artificial sweetener in a blender until it looks like powdered sugar.
  4. Place powdered sugar into a large plastic zipper bag or a plastic bowl with a cover. Add corn cereal and shake diabetic candy until evenly distributed. Add more sugar if you like to the diabetic candy.
