Diabetic Cookie Recipes

If you have diabetes, you can learn this diabetic cookie recipe. It’s as easy as any other recipe, so just follow the directions and be on your way to new ideas on satisfying your sweet tooth. Everyone will love the taste of these Almond Cookie Cups. Prep time is ten minutes and baking time is fifteen minutes.

 Ingredients:

  • ½ cup sugar
  • ¼ cup margarine, softened
  • ¼ tsp almond extract
  • 3 egg whites
  • ½ cup flour (white all purpose)
  • ¼ cup ground almonds
  • Soybean oil cooking spray
  • Mixing bowl
  • 1 ounce custards cup
  • Parchment paper (wax paper)
  • Baking sheet
  • Tape
  • pencil
  1. Place the parchment paper on the baking sheet and draw three large circles on it. Turn the paper over and tape it onto the baking sheet.
  2. Beat sugar with margarine until fluffy
  3. Beat in the almond extract and the egg whites
  4. Mix and beat in the flour and ground almonds
  5. Spoon one tablespoon batter into the middle of each of the three circles and spread to the outer edges of the circles.
  6. Bake for five minutes at 425 degrees
  7. Remove from oven and let cool 30 seconds
  8. Quickly and gently, move the cookies from the baking sheet to an inverted one ounce custards cup that has been coated with cooking spray
  9. Shape cookies around the cups until they are cooled completely
  10. Continue making more cookies with the rest of the batter in the same way. The parchment may be re-used to complete the process

These cookie cups can be used for several things, like serving ice cream, pudding, custard or even fresh fruit.
