Easter Cake Recipe
Easter is not only a time for celebration, but a time for an Easter cake recipe as well. For every holiday imaginable, families are gathering and cooking to celebrate whatever holiday may be happening. Easter is no different when it comes to making desserts. All families enjoy sweets, but it is mostly the children who eat all the sweet stuff they can get their mouths on. Listed below you will find an easy Easter cake recipe that will be a hit with kids and adults.
Carrot Cake
Ingredients:
- 3 eggs
- 3/4 cup buttermilk
- 3/4 cup vegetable oil
- 1 1/2 cups sugar
- 2 tsp. vanilla extract
- 2 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 cups all-purpose flour
- 2 tsp. baking soda
- 2 cups shredded carrots
- 1 cup flaked coconut
- 1 cup chopped walnuts
- 1 can crushed pineapple with juice
- 1 cup raisins
Directions:
- Heat oven to 350 degrees.
- Grease and flour a baking dish. In a large bowl, sift flour, baking soda, salt and cinnamon. Set to the side.
- In another large bowl, combine eggs, buttermilk, oil, sugar, vanilla and mix well. Add flour mixture and mix. In a medium bowl, combine shredded carrots, coconut, walnuts, pineapple and raisins.
- Use a spoon and add carrot mixture to batter and mix well. Pour into baking pan, and bake at 350 degrees for one hour.
- Check to see if cake is done by inserting a toothpick. If it comes out clean, the cake is done. Cool for twenty minutes before you serve to family and friends. Add or omit ingredients as desired.
