Easter Dinner Recipes

Celebrate Easter with these Easter dinner recipes. Enjoy a succulent dinner in the intimacy of your home with family and friends. Ester is an excellent time to bring warm memories, and take us back to family celebrations. Each of these recipes is easy to prepare. You can also add any ingredient of your choice to personalize the dish for your family.  

1. Easter Garlicky Spinach With Raisins And Pine Nuts Dinner Recipe

  •  ¼ cup raisins
  •  2 tbsp. olive oil
  • ½ cup pine nuts
  • 3 garlic cloves, finely chopped
  • 18 oz. fresh spinach
  • salt and pepper
  1. Soak the raisins in a small bowl with boiling water for ten minutes. Drain, and set aside.
  2. Saute the pine nuts in a large pot with little oil, until golden.
  3. Add the garlic and cook for about 30 seconds. Don’t let the garlic burn.
  4. Add the spinach to the pot, and toss over medium heat, for three minutes.
  5. Stir in the raisins, and season with salt and pepper.
  6. Serve immediately.

 2. Easter Spaghetti With Garlic And Chili Dinner Recipe

  • 11 oz. spaghetti
  • 5 tbsp. olive oil
  • 3 garlic cloves, crushed
  • 1 dried red chili
  • A handful of fresh, chopped parsley
  1. Cook the spaghetti in salted boiling water, according to the instructions on the package. Drain, and set aside.
  2. Heat the olive oil in a frying pan over medium heat.
  3. Add the garlic and the dried red chili, and fry for about two minutes, or until the garlic starts to brown.
  4. Remove the pan from the heat, and discard the chili.
  5. Stir in the pasta in the garlicky oil, and add the fresh parsley on top of it.
  6. Toss to combine, and serve immediately.

3. Easter Baked Chicken With Cinnamon And Honey-Roasted Tomatoes Dinner Recipe

  • 4 skinless breasts
  • 1 garlic clove, crushed
  • 1 tsp. paprika
  • juice of one lemon
  • 2 tbs. olive oil
  • 8 ripe medium tomatoes cut in half
  • 1 tsp. ground cinnamon
  • 3 tsp. honey
  • salt and pepper
  1. Place the chicken breasts in a baking dish.
  2. Whisk the lemon juice, the garlic, and half of the olive oil in a small bowl.
  3. Season to taste with salt and pepper, and pour this combination over the chicken breasts.
  4. Cover, and let marinate for one hour.
  5. Heat the oven to 425 F, place in the tomatoes, cut side up, around the chicken breasts.
  6. Sprinkle the cinnamon over them, and add salt and pepper.
  7. Drizzle the honey and the rest of the olive oil.
  8. Bake for about 25 minutes, or until the tomatoes are tender and the chicken well cooked.
  9. Spoon the released juice over the chicken, and serve immediately.

4. Easter Eggplant Side Dish Dinner Recipe

  • 2 large eggplants
  • 2 chopped garlic cloves
  • ½ onion, sliced
  • juice of one lemon
  • ¼ cup of fresh, chopped parsley
  • salt and pepper 
  1. Preheat the oven to 400 F.
  2. Prick the eggplants with a fork, and bake them for 30 to 40 minutes.
  3. Let them cool, and scoop out the flesh into a blender or food processor. Discard the skin.
  4. Add the chopped garlic cloves, the onion, lemon juice, and the parsley.
  5. Blend until creamy, and season with salt and pepper.
  6. Top with more chopped parsley, and serve immediately. 

5. Easter Carrot And Cardamom Cake Dessert Recipe

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 cup sunflower oil
  • 3 eggs
  • grated rind of one orange
  • 1 tsp. cardamom
  • ½ tsp. ground ginger
  • 2 ¼ cups all-purpose flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 large carrots, grated
  • ¾ chopped walnuts
  1. Heat the oven to 350 F.
  2. Grease and dust an 8-inch a cake pan.
  3. Beat the eggs, oil, and sugars in a large sized bowl.
  4. Add the orange rind, cardamom, and ginger.
  5. Sift in the flour, and mix gently.
  6. Add the carrot and walnuts.
  7. Put this mixture into the prepared cake pan.
  8. Bake for one hour, or until the cake cooked.
  9. Turn out onto a wire rack and let it cool. 

Cake Frosting

  • 1 cup Mascarpone cheese, grated
  • ½ cup confectioner’s sugar
  • 2 tsp. lemon juice
  • grated rind of one orange
  1. Beat the ingredients together until creamy.
  2. Spread over the cooled cake.
