Easy Recipe for Stuffed Chicken Breast

The best recipe for easy stuffed chicken breasts also turns out a dish that looks like something a master chef might make.    Bake these stuffed chicken breasts for a special meal and you are sure to impress your guests.

Easy Recipe for Stuffed Chicken Breasts

4 boneless skinless chicken breasts
1 package of stuffing mix
1 can of cream of chicken soup
1 can of cream of celery soup

  1. Preheat oven to 350 F.
  2. Remove chicken from the packaging and rinse thoroughly under running water.  Pat chicken dry with a paper towel and set aside. 
  3. Add a small amount of olive oil to a baking pan large enough to hold the four pieces of chicken.  Make sure that the olive oil is evenly distributed throughout the pan to keep the chicken from sticking.
  4. Lay out one chicken breast on a large piece of waxed paper and cover with an additional piece of waxed paper, then pound or roll out the chicken breast to about ¼ inch thickness.   Repeat with the remaining chicken breasts. You do not have to be precise about the thickness of the meat, just make sure that the meat is approximately even.   If you choose to pound the chicken, it is best to use the flat side of a metal tenderizing mallet.   When rolling out the meat, you can use a sturdy rolling pin or a can of vegetables.
  5. After all of the chicken pieces have been flattened, prepare the stuffing mix according to package directions.   
  6. Divide the stuffing mix into four portions and top each of the flattened chicken breasts evenly with one portion each.   Now, carefully roll up each filled piece of chicken, as you would roll a jelly roll.  Secure the rolls with toothpicks and place into the prepared pan, toothpick side down. 
  7. Top the stuffed chicken breasts evenly with the cream of chicken soup and the cream of mushroom soup, spooning the soup directly out of the can onto the tops and sides of the chicken.  For those of you watching your sodium, you may want to use the reduced salt version of both creamed soups.
  8. Place the stuffed chicken breasts in the oven and cook for one hour.  Remove the chicken from the oven and serve.  Be sure to remove the toothpicks from the chicken before serving.  This recipe makes four servings.
  9. For a fancier presentation, slice the stuffed chicken breasts before serving so that the pinwheel design can be seen.   These stuffed chicken breasts go well with a tossed green salad, garlic mashed potatoes and a loaf of crusty bread.
