Easy Tortilla Casserole Recipe

Here is an easy tortilla casserole recipe. This easy tortilla casserole recipe is great for a quick dinner on those busy nights. You can even fix this tortilla casserole up ahead of time, stick it in the refrigerator and just pop it in the oven when you are ready to start your tortilla casserole dinner.

Ingredients:

  • 1 large can diced tomatoes, drained
  • 2 cloves garlic, peeled
  • 1 small onion chopped
  • 2 cans chipotle chiles
  • 2 T. vegetable oil
  • 2 c. shredded cooked chicken
  • ¾ c. chicken broth
  • ¼ c. chopped cilantro
  • Salt and pepper to taste
  • 8 c. corn tortilla chips, broken in 2-inch pieces
  • 1 ½ c. shredded cheddar, Monterey jack or taco seasoned cheddar cheese
  • 1 c. sour cream

 

Directions:

  1. To begin your tortilla casserole recipe, heat oven to 425 degrees and grease a 2 quart casserole dish. Puree the tomatoes, garlic, onion and chiles in a blender until smooth.
  2. Heat oil in a medium pan over medium heat until simmering. Add the tomato sauce and bring to a simmer, and cook about five to seven minutes or until slightly thickened. Add in the chicken, broth and cilantro and season to taste with salt and pepper.
  3. Place half the tortilla chips in the prepared dish and top with half the chicken and sauce mixture and half of the cheese. Repeat with a second layer and using fingers, expose several of the tortilla chips on the top layer so they can crisp while the tortilla casserole bakes. Bake 12 to 15 minutes or until bubbly and the cheese begins to brown. Serve with sour cream.
