Fat Tuesday food traditionally mark the beginning of the Mardi Gras season. These mainly Cajun style recipes spice up a party and many keep well for leftovers to snack on during the rest of the Fat Tuesday celebration. The simple menu laid out here will keep it quick and easy, letting you get back to the party as quickly as possible.

Spicy Shrimp Appetizers

You will need:

  • 5 lbs of small or medium shrimp
  • Cajun seasoning
  • Large pot
  • Water
  1. Start this Fat Tuesday food by bringing an extra large pot of water to boil.
  2. Add a hearty amount of pre-mixed Cajun seasoning to the water. The top of the water should be covered in the seasoning.
  3. Drop shrimp into the boiling water for five to ten minutes depending on the size of the shrimp.

Slow Cooker Red Beans and Rice.

You will need:

  • 16 ounces of smoked sausage
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 clove chopped garlic
  • 2 large cans canned dark kidney beans
  • 16 ounce whole peeled tomatoes
  • salt to taste
  •  Red pepper to taste
  • 2 cups brown rice
  • Water
  1. For this Fat Tuesday food, combine all ingredients except the rice in a large slow cooker and set to low. Fill with water to cover the mixture.
  2. Cook overnight for eight hours.
  3. Add rice and turn the cooker to high for three hours.

Okra and Tomatoes

You will need:

  • 1 large bag of frozen okra
  • 2 large cans of stewed tomatoes
  • salt
  • black pepper to taste
  1. This ultra fast and easy Fat Tuesday food begins with placing the frozen okra and tomatoes in a large microwave safe dish.
  2. Salt and pepper the mixture to taste.
  3. Microwave on high until hot throughout.

Cajun Catfish

You will need:

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 tablespoon olive oil
  • 14-1/2 ounces of diced tomatoes
  • 1/2 cup sliced  mushrooms
  • Small can sliced ripe olives
  • Dash of garlic powder
  • 4 catfish fillets
  1. Cook this Fat Tuesday food by combining all ingredients except the fish in a large skillet.
  2. Cook the mixture on medium heat until the celery and onions are tender.
  3. Place the fish fillets in a large baking dish and cover with the mixture.
  4. Bake at 400 degrees for 30 minutes.
