There are a million grilled chicken breast recipes available to anyone wanting to spice up their chicken cooking night. Since chicken is such a healthy protein, it is often a favorite to be used in dinners for a healthy meal. These two recipes are not only easy to make, but will offer some excitement to chicken night in anyone's house.

For Stuffed Chicken Breast, you will need:

  • 4 boneless chicken breast
  • 4 slices of prosciutto (bacon can be substituted)
  • 4 slices of provolone
  • 10 fresh sage leaves (chopped)
  • 2 cloves of garlic (smashed)
  • 2 tbsp. butter
  • Olive oil
  • Salt and pepper
  • Toothpicks
  1. Prepare the chicken. First, you are going to prepare the chicken by slicing a small pockets into the side of the chicken breasts.
  2. Mix the butter and garlic. Mix the butter and garlic, then smear on the inside of pockets. Next, take one slice of prosciutto (or bacon) and one slice of cheese, a sprinkle of the chopped fresh sage, and stuff the pocket.
  3. Secure the pockets. Next, take a toothpick or two and secure the pockets closed with them. When done, brush each side of the chicken breast with olive oil.
  4. Start the grill. Make sure that the grill is heated up to a medium heat. Anything too low and the chicken will not cook through, and anything too high will cook the outside of the chicken too fast while leaving the center raw.
  5. Grill the chicken. Lay the stuffed chicken breast on the grill, close the lid, and cook for three minutes. Open the lid and flip the chicken breast over, then close the lid and cook for another three minutes. The chicken breasts should not take more than six to ten minutes, depending on your grill and the heat it is putting off.
  6. Once done, remove the toothpicks. Take the chicken from the grill and let them rest on a plate for a few minutes. Once the filling has had a time to rest some, and the cheese will not come oozing out, you can remove the toothpicks and serve this with any side dish.

For BBQ Grilled Chicken Breasts, you will need:

  • 4 to 6 skinless chicken breasts
  • Favorite BBQ sauce
  • Cooking brush
  • Pounding tool
  1. Prepare the chicken. The first thing to do if you are using boneless skinless chicken breasts is to pound them all to the same thickness so they will cook evenly while on the grill. This will not only allow each piece of meat to cook evenly, but also ensure all the pieces of chicken on the grill are ready at the same time.
  2. Prepare the grill. Now, you want to take a brush and clean off the grill from the last time you used to to make sure there are no other flavors to mix with the BBQ chicken. Turn the grill on a medium heat so it is pre-heated and ready for the chicken.
  3. Prepare the sauce. Pour the BBQ sauce into a bowl, and grab a clean cooking brush. They make silicone brushes as well as wooden handled brushes that are used for brushing sauces.
  4. Grill the chicken. Take the chicken breasts, and lay them down evenly on the grill. Take the BBQ sauce, and lightly brush a thin layer over the top of the chicken breasts.
  5. Cook for twelve to eighteen minutes. Depending on how thick the chicken breasts are, and how thin they were pounded out to, they will cook for twelve to eighteen minutes. You will want to turn the chicken every few minutes to re-baste them with BBQ sauce. Brushing a small thin layer over them every few minutes as they are flipped will allow the heat to caramelize the BBQ sauce to the chicken, creating layers over the chicken breasts.
  6. Remove the chicken. Once the chicken breasts are done, remove them from the grill and let them sit for a few minutes to let the juices settle back into the meat to keep the chicken moist. If you need to, remove one piece and slice into it to check the center and ensure it is cooked all the way through.
