Ground Beef Submarine Sandwich

Ingredients:

  • 1 pound ground beef
  • 2 teaspoons cooking oil
  • 1 loaf French bread
  • 8 ounce tomato sauce
  • 2 tablespoons diced onions
  • 2 tablespoons chopped peppers
  • ½ teaspoon garlic powder
  • 1 teaspoon vinegar
  • 1 teaspoon brown sugar
  • Salt and pepper to taste
  • 1 cup shredded Cheddar or Swiss cheese.
  1. Preheat oven to 350 degrees.
  2. Sauté ground beef and seasonings, pour off fat.
  3. Add tomato sauce, sugar, vinegar, onions and peppers.
  4. Cook for another five minutes. Taste test and add needed ingredients.
  5. Slice the bread loaf into half or thirds and also split open lengthwise and place on a baking sheet.
  6. Spoon ground beef mixture into bread.
  7. Sprinkle the cheese generously on top.
  8. Bake fifteen minutes and serve hot with potato chips and cold beer.

Ground Beef, Ginger and Garlic Stir Fry

Ingredients:

  • 1 pound ground beef
  • 2 tablespoons orange juice
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced fresh garlic
  • 2 tablespoons diced green onions
  • 1 tablespoon finely grated orange peel
  • 2 tablespoons Hoisin sauce
  • 2 cups cooked rice or egg noodles
  1. Sauté ground beef for two minutes.
  2. Add onions, ginger, garlic and grated orange peel.
  3. Cook and stir for three minutes.
  4. Blend the orange juice and cornstarch together, thoroughly.
  5. Add the orange juice and Hoisin sauce to the beef mixture and cook for two minutes.
  6. Serve the beef stir fry over rice or noodles while hot with Japanese plum wine or sake.

Quick Ground Beef Hash

Ingredients:

  • 1 pound ground beef
  • 2 cups cubed potatoes
  • ½ cup minced onions
  • 1 teaspoon ground garlic
  • ¼ teaspoon grated nutmeg
  • 1/8 teaspoon ground cumin
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon cooking oil
  • Salt and pepper to taste
  1. Sauté all ingredients in cooking oil for fifteen minutes or until nicely browned, on high heat.
  2. Serve hot with eggs and biscuits for breakfast.
