Holiday Fruit Cake Recipe

By keeping some basic guidelines in mind, you can learn about how to make holiday fruit cake. Though this recipe is most often pulled out during Christmas, it can be enjoyed during any time of the year. Though this recipe is quite delicious, you may want to experiment with different fruit choices in order to achieve optimal results. Try adding dried apples, cranberries, and even pears for an unique, tasty treat. Your guests will be begging for the recipe.

Ingredients:

  • 2 cups butter
  • 4 cups confectioners' sugar
  • 8 eggs, separated
  • 2 ounces candied citron peel
  • 2 ounces candied orange peel
  • 1 1/2 cups candied pineapple chunks
  • 3 cups golden raisins
  • 1 1/2 cups candied cherries
  • 4 cups chopped pecans
  • 3 cups flour
  • 1/2 cup orange juice

Steps

  1. Chop pineapples, raisins, and pecans into small pieces. Combine with other candied fruit, and soak in orange juice overnight.
  2. Beat butter and confectioners' sugar. Slowly add in egg yolks. Finally, stir in sifted flour, fruit, and juices.
  3. Beat egg whites, and fold into mixture. Heat your oven to 275 degrees Fahrenheit. Place a small pan filled with water into the oven. Finally, line a 5 by 9 inch loaf pan with double sided waxed paper.
  4. Pour the batter into the loaf pan. Use a spatula to spread out the batter, making sure it is evenly distributed through the pan.
  5. Bake until golden brown, around 2 1/2 hours. The fruit cake should be golden brown, and a fork that is inserted to the cake should come out clean.
