Things you will need to butcher beef:

  • Sharpened Knives
  • Small Skinning Knife
  • A device to suspend the beef
  • Beef Saw
  • Ax
  1. Bleed The Calf. After killing the animal, it is necessary that you make sure that it bleeds completely by cutting the throat. Take the butcher knife and cut across the throat. When you butcher beef, this step is always vital because the meat will have a delicious flavor when cooked.
  2. Remove The Hind Legs. Skin the hind legs by using the knife to make an incision through the hide and skin. With the knife, slowly cut the hide away from the flesh of the animal, and use the saw to remove the back hooves before you suspend the beef carcass from a tree.
  3. Skinning The Beef. With the beef suspended, use a knife to skin the beef by separating the hide from the flesh. Start this process from the back legs and work your way down towards the head area. When you've reached the neck, saw off the head so that the hide can be completely removed. Remember to use the meat saw to cut the legs off at the knee horizontally.
  4. Cut the Underside With a Beef Saw. Make sure that the beef is thoroughly cut open before you remove the intestines and various organs. After the bowel is removed, cut through the length of the beef vertically in half. After you slowly saw downwards through the pelvic bone, prepare to cut the beef into smaller portions for ease of use.
  5. Quarter The Beef. To proceed with this step, you would need to saw between the second and third ribs of the beef. Use the ax to remove the brains, by cutting through the head, and chop through the hide and skull in order to remove the brains.
