How To Cook A Yellow Summer Squash

Have you ever passed that strange looking vegetable in the produce department and wondered how to cook a yellow summer squash? Yellow summer squash is easy to prepare and can be grilled, broiled, pan fried, baked, or sautéed. The quickest method to cook yellow summer squash is to slice it and pan fry.

To cook a yellow summer squash, you will need:

  • Skillet
  • 8 - Yellow summer squash
  • ¼ cup butter
  • 1 medium onion
  • ½ teaspoon salt
  • ½ teaspoon black pepper (optional)
  1. Wash eight yellow summer squash in clear water. Note: If the skin of the squash has been oiled by the grocer, use a small amount of dish detergent to remove it, and rinse thoroughly with clear water. Use a sharp knife to cut off both ends of the squash. Slice the squash into ½ inch wide rounds.
  2. Chop one medium onion into fine pieces.
  3. Melt butter in a skillet over a medium high heat. Note: Use care not to burn the butter. Saute the chopped onions in the butter for five minutes, stirring constantly.
  4. Add the sliced summer squash, salt, and pepper (optional) to the skillet and cook 15 to 18 minutes until slightly tender. Serve immediately.

Tip:

It is not necessary to peel the skin off yellow summer squash. When cooked, the skin enhances the flavor of the squash.

 

Warning:

Overcooking yellow summer squash will make it mushy. Cook the squash until it is between firm and tender. There should be some firmness in the squash.
