How To Make Broccoli Casserole

To make a broccoli casserole, you will need:

  • 1 head of fresh broccoli (1 1/2 pounds approximately; frozen broccoli can be used if fresh is not available)
  • 2 tablespoons butter
  • 2 tablespoons virgin olive oil
  • 3 green onions
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 2 cups milk
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cheddar cheese
  • 1/3 cup parmesan cheese
  • 1 cup seasoned bread crumbs
  • Non-stick spray
  1. Wash and cut the broccoli spears into two-inch pieces. Steam them lightly until they are three-quarters of the way done.
  2. Put the butter and the oil in a large skillet. Heat the skillet, and when the oils are hot add in the green onions and the flour.
  3. After the flour and oil are mixed well and starting to brown, add in the chicken broth. Stirring quickly with a whisk, let the gravy come to a boil.
  4. As the gravy starts to thicken, add in the milk. Keep stirring constantly. Add in the cheddar cheese and the seasonings and stir until the cheese is completely melted. Add in the broccoli pieces and cook for one minute.
  5. Spray a rectangular casserole dish with the non-stick spray. Place the broccoli casserole mixture in the rectangular pan.
  6. Cover the broccoli mixture with the seasoned bread crumbs. On top of the seasoned bread crumbs, sprinkle the parmesan cheese.
  7. Bake in a preheated 400 degree oven for 20 to 25 minutes. Remove from the oven and let cool for at least five minutes before serving.

You can also make a light broccoli casserole by making a few changes to the ingredients list. To make a light broccoli casserole, you will need:

  • 1 head of broccoli (approximately 1 1/2 pounds)
  • 2 tablespoon of virgin olive oil
  • 3 green onions
  • 1 tablespoon whole wheat flour
  • 2 cups chicken broth
  • 2 cups almond milk
  • 2 ounces goat cheese, shredded
  • 1/4 cup parmesan cheese
  • 3/4 cup whole wheat bread crumbs
  • Salt and pepper to taste
  • 1 teaspoon dried basil
  • Non-stick spray
  1. Make this broccoli casserole exactly the same as the broccoli casserole above, only using the lighter ingredients. The flavors are both delicious, but this broccoli casserole has a lot less fat.
  2. An easy way to make almond milk is with some almonds that have had the skins removed. This can be done easily by blanching the almonds in some boiling water and then quickly removing the skins with your fingers. Take a quarter cup of almonds and two cups of purified water and place in a blender. Blend the water and almonds for three minutes. Now you have almond milk. Use this milk in the above light recipe.
  3. Making the whole wheat bread crumbs is also easy. Take three whole wheat pitas or slices of whole wheat bread and cut into small pieces. Place these pieces in a preheated 400 degree oven and toast for a few minutes. Keep checking the bread cubes to make sure they do not burn. After the bread is toasted all the way through, place them in a blender or food processor and pulse the bread until they become fine bread crumbs. You can add in some basil or oregano for spiced bread crumbs.
