If you want to serve a healthy meal, get creative and learn how to make a centerpiece out of celery, carrots, cucumbers and other healthy foods. This type of centerpiece will have your guests craving to be eating healthy just so that they can get their hands on the centerpiece! There are many things that can be made with these vegetables, but this centerpiece will proudly display your efforts right before your guests devour it!

You will need:

  • seven cucumbers
  • two cups of radishes
  • five stalks of celery
  • two purple onions
  • two cups of shredded carrots
  • a cup of mayonnaise
  • a bottle of Italian dressing
  • You will also need a decorative bowl and a large circular platter or several small plates.
  1. Prepare the vegetables. Peel the cucumbers and  onions. Dice up the radishes, celery and one quarter of an onion. Cut the remainder of the onions into slices as you would for a sandwich.
  2. Prepare the cucumbers. Once the cucumbers are peeled, slice them in half twice. To do this, slice the cucumbers down the middle so that they now can lay flat on the counter. Next, cut the cucumbers halves in half so that you now have fourteen cucumber pieces. Take eight of those pieces and scoop out the seeds so that the cucumber forms a sort of bowl. Take three of the remaining six pieces and cut them into thin slices. Dice the rest of the cucumbers.
  3. Create the center salad. To create the center of the centerpiece, place the sliced onions, sliced cucumbers, one quarter cup carrots and one quarter cup celery in the decorative bowl. Saturate with Italian Dressing.
  4. Create the cucumber stuffing. You will be making a salad to fill the caverns of the scooped out cucumbers. There are two ways to do this. You will be using either shredded carrots or diced purple onions to decorate the top of the salad. Make your choice before you begin mixing the salad. to make the salad, place all of the remaining vegetables, with the exception of either a quarter cup of onions or carrots in a bowl. Mix together. Add mayonnaise as you mix the salad. The salad should be thick enough to not run off the spoon.
  5. Fill the cucumbers. Put the salad in the caverns of the scooped out cucumbers. Sprinkle the salad with either the shredded carrots or diced onions. Arrange in a circle around the decorative bowl. Keep in mind that if you use all organic products to make this centerpiece out of celery, carrots, cucumbers and other things, you will have two completely healthy salads with no chemicals!
