  • 1 whole chicken, about 3-5 pounds
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 1 tablespoon olive oil
  • 1/3 cup fresh cilantro
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 6 cups chicken broth
  • 1 cup milk
  • 1 package flour tortilla shells
  • 1/2 cup flour

  1. Boil the chicken to cook it completely and allow to cool. Remove the meat from the bones, discarding the carcass, skin and liquid. Chop the chicken or shred it with a fork.
