Things you will need:

  • 3 cups of all purpose flour

  • 6 tablespoons of corn meal

  • 6 tablespoons of brown sugar

  • 1 teaspoon of salt

  • 1 teaspoon of pure vanilla extract

  • 1 1/2 teaspoon of baking powder

  • 1/3 cup of Half & Half

  • 1 cup of cold water

  • Peanut oil for frying

  1. Mix the ingredients together.  Sift the flour, corn meal, salt and baking powder in a large bowl.  Then stir in the brown sugar, making a dry mixture.  Mix the vanilla extract, water and Half & Half in a separate small bowl. Now stir the liquids into the dry mixture, making a soft dough. Knead the dough a few times, but don't remove it from the bowl.

  2. Let the dough sit for a while.  Cover the top of the bowl with a dry towel and let it sit for about a half an hour.

  3. Shape the dumplings.  Put a little bit of flour on your hands and form the dough into eight equal sections.  Knead them as you pull and work them into oblong shapes, which should be about 1/8 inch thick.

  4. Fry the dumplings.  Put some peanut oil into a skillet.  Heat up the peanut oil and deep-fry the dumplings until they're golden brown, turning them once.  Make sure the oil doesn't get too hot though.  Frying shouldn't take very longonly about three minutes per side.

  5. Let the fried dumplings dry.  Remove the Jamaican fried dumplings from the skillet with a slotted spoon and place them on paper towels to drain.

  6. Enjoy the fried dumplings!
