- Prepare the flavor ingredients. Wash and drain the fruit and cut into small pieces. Remove stems, seeds and pits from the fruit. Wash and drain herbs and gently crush the leaves. Slice vanilla beans or peppers lengthwise. Place the fruit, spices, or herbs in the bottom of the bottle or jar and pour vodka over to the top to begin the infusion. Seal the lid tight and store in a cool dark place to avoid direct sunlight. Infuse the vodka for between 2 and 14 days, depending on the strength and flavor you desire.
There are no set rules about the ratio of fruit, spice, or herbs to vodka. The more flavor ingredients you use the stronger the infusion will be. Start with a mixture and experiment from there. Like any other creative endeavor success is a matter of trial and error. The first effort to infuse vodka may not be your best. But keep experimenting until you create your favorite infused vodka flavor.
