How To Make Gelato

As a bonus, gelato has much less fat than ice cream and is tremendously flavorful. If you want to make restaurant quality gelato, you can always purchase a gelato maker. However, you can very easily make this Italian treat right in your own home by following these easy steps.
To make gelato you will need:
- 1 1/2 cups milk
- 1 cup sugar
- 1/8 teaspoon salt
- 4 egg yolks
1 tablespoon vanilla
Pour the milk into a boiler and heat on low.
- Add the salt and sugar. Stir until it is dissolved.
- Gently beat the egg yolks. Place a double boiler on the stove and bring the water in the bottom to a boil. Once it is boiling, place the egg yolks in the top boiler.
Stir the milk mixture into the eggs with a whisk.
- Cook until the mixture has thickened. You will need to whisk the mixture constantly while it is cooking.
Chill the mixture overnight.
Add vanilla and mix into the gelato.
- You may also add fruit at this time. If you want a flavored gelato, you can add three cups of fruit puree before serving. Stir in the fruit and then serve immediately.
