How To Make Moo Goo Gai Pan

How to make Moo Goo Gai Pan is quite easy once you learn how. Moo Goo Gai Pan is a very popular Chinese dish that is served at most Chinese restaurants. It literally means "fresh mushrooms with sliced chicken". Here is an easy guideline on how to make Moo Goo Gai Pan.

Ingredients needed are:

  • 3/4 pound boneless, skinless chicken breasts

Marinade:

  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry
  • a few drops sesame oil
  • 1 tablespoon cornstarch
  • 1 cup fresh button mushrooms
  • 1/2 cup canned bamboo shoots
  • 1/2 cup canned water chestnuts
  • 2 slices ginger
  • 1 garlic clove
  • 1/2 cup chicken stock
  • 2 tablespoons oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch
  • 3 tablespoons oil for stir frying, or as needed

 

  1. Chop your chicken breasts into thin strips. Blend in your marinade, adding your cornstarch last and marinate your chicken for about 15 minutes.
  2. Prepare your vegetables by chopping them into thin slices. Rinse all of them thoroughly and peel and mince your garlic.
  3. Mix your chicken stock, oyster sauce, sugar, and cornstarch together and blend well. This will be your Moo Goo Gai Pan sauce.
  4. Heat your wok and add about two tablespoons of your frying oil. Add your chicken and stir-fry until it is cooked thoroughly. Remove and set aside. Add your last tablespoon of oil as well as your ginger and garlic and mix well.
  5. Add your mushrooms and cook for a few seconds, then add your bamboo shoots and your water chestnuts. Stir-fry for a very short time; you want these vegetables to still have some crunch.
  6. Add your sauce to the middle of your pan, and cook until it has thickened.
  7. Return your chicken to your wok and mix all your ingredients well, coating them with your Moo Goo Gai Pan sauce evenly.
