Low Fat Pesto Recipe

For simple low fat pesto recipes, look no further than the following five simple ingredients that you probably already have on hand. Typically, pesto sauce contains a lot of oil. With this low fat pesto version, you don’t have to feel guilty about indulging. This pesto recipe is a great way to make use of the basil in your garden.

To make low fat pesto, you will need:

  • 2/3 cup chicken or vegetable stock

  • 2 cloves garlic

  • 1 cup fresh basil

  • 1/3 cup grated Parmesan cheese

  • 2 tbsp. pine nuts (can substitute with almonds)

  1. Put the chicken or vegetable stock and the garlic in a small pot and heat for five minutes stirring constantly.  Allow the mixture to cool.

  2. Chop up the basil using a food processor.

  3. Add the cooled stock and garlic mixture, the Parmesan cheese, and the pine nuts (or almonds) to the basil in the food processor.

  4. Chop until it has a fine consistency and is well blended.

  5. Meanwhile, cook any type of pasta according to the directions on the box.

  6. Toss the sauce with the cooked pasta and serve.

Makes four servings.
