Marinade For Chicken
A marinade for chicken offers a great depth of flavor and at the same time, enhances the chicken taste. A marinade also makes the chicken juicier. To obtain the best results, let the chicken absorb the marinade overnight. If in a hurry, soak the chicken in the marinade for at least 4 hours. It’s hard to go wrong with grilled or broiled chicken soaked in a good marinade.
1. Spicy Marinade For Chicken
- 2 or 3 lbs. chicken breast, cut into small strips.
- 2 tsp. cumin
- 1 tsp. chili powder, (or more, if desired)
- 1 tsp. ginger
- ¼ tsp. ground allspice
- ¼ tsp. paprika
- freshly ground black pepper
- ¼ tsp. oregano
- salt
- fresh lime wedges
- Whisk the spices in a bowl.
- Place the chicken strips in the bowl, and refrigerate 4 or 5 hours.
- Preheat broiler, or prepare the charcoal grill.
- Place the marinated meat under the broiler, or on the grill.
- Cook each side until browns.
- This marinade will create a crust.
- Serve with wedges of fresh lime.
2. Balsamic Glazed Marinade For Chicken
- 4 lb. chicken
- ½ cup balsamic vinegar
- ½ cup honey
- 1 tbs. brown sugar
- 3 garlic cloves, crushed
- 1 tsp. ground sage
- 2 tbsp. olive oil
- 1 dash dried thyme
- 1 shallot, minced
- freshly ground pepper
- Combine all the ingredients, except the chicken, in a large bowl.
- Place the chicken in the bowl, and spoon the marinade over it.
- Cover, and refrigerate for at least 4 hours.
- Preheat the oven to 375 F.
- Bake the chicken in a roasting pan for 1 hour.
3. Orange Ginger Marinade For Chicken
- 2 lbs. chicken breasts, cut into 1 inch pieces
- 6 oz. orange juice concentrate
- ¼ cup vegetable oil
- 2 tsp. garlic, minced
- 2 tbsp. lemon juice
- 1 tsp. ground ginger
- 1 tbsp. parsley, finely chopped
- ½ tsp. rosemary
- ½ tsp. oregano
- ½ tsp. marjoram
- ½ tsp. thyme
- salt and pepper
- Combine all the ingredients, except the chicken, in a large mixing bowl.
- Immerse the chicken in the marinade, and refrigerate for a few hours.
- Prepare the charcoal grill, and cook the chicken on skewers.
4. Peanut Butter Marinade For Chicken
- 2 whole boneless chicken breasts, cut into 1 inch chunks
- ¼ cup brown sugar
- ¼ cup white wine vinegar
- ¼ cup tomato paste
- 3 large garlic cloves, chopped
- ¼ cup peanut butter
- Place the chicken breast in a shallow container.
- Whisk the rest of the ingredients in a small bowl.
- Pour this mixture over the chicken pieces, tossing well, until well coated.
- Refrigerate for at least 4 hours.
- Cook the chicken pieces under a broiler, or on a charcoal grill, until each side turns golden.
- Sprinkle the chicken with the rest of the marinade.
5. Lemon Marinade For Chicken
- 3 skinless, boneless chicken breasts
- 1 fresh lemon
- 1 tbsp. Dijon mustard
- ½ cup red wine vinegar
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil leaves, chopped
- 1 tsp. dried oregano
- ½ tsp. ground sage
- ¼ cup olive oil
- freshly ground pepper
- salt
- Combine all the ingredients, except the chicken, in a large bowl, and mix well.
- Put the chicken in the bowl, and refrigerate for 3 or 4 hours.
- Prepare the charcoal or gas grill.
- Grill the chicken pieces over medium heat, until cooked.
6. Tandoori Style Marinade For Chicken
- 3 boneless and skinless chicken breasts, cut into strips
- 1 tbsp. cumin
- 2 tsp. coriander
- 3 garlic cloves, crushed
- 1 pinch saffron
- 1 cup plain yogurt
- salt
- Mix all the spices in a bowl.
- Add the chicken to the bowl.
- Cover, and allow it to marinade for 3 or 4 hours.
- Prepare the charcoal or gas grill.
- Place the chicken pieces on it, and cook until each side browns, turning from time to time
- Serve with steamed rice.
