Passover Recipes Macaroons

Preheat the over to 325º. Grease a cookie sheet or line it with wax paper.

Beat 3 egg whites with a whisk or electric mixer until fluffy. Slowly beat sugar and vanilla into the egg whites until the peaks are stiff. Note: To test for stiff peaks stop beating with the electric mixer or whisk and pull upward on the egg whites causing peaks. Stiff peaks will hold their shape.

Fold the coconut into the egg whites using a wooden spoon until completely blended. Use a teaspoon to drop dollops of the mixture every two inches onto the cookie sheet. Bake at 325º for 18 to 20 minutes. Let the macaroons cool completely before storing in an air tight container.

Chocolate Macaroons can be made from this recipe by blending two squares of melted baker’s chocolate into the batter with the coconut.
Tips
Macaroons can be embellished with a variety of garnishes like chocolate chips or chopped almonds that are added to the macaroons before baking. Create a chocolate dip by melting 6 ounces of sweetened chocolate and 1 tablespoon of shorting and blend thoroughly. Dip the baked macaroons in the warm chocolate.
