Picnic Recipes
If you're planning a picnic, you'll need picnic recipes for fresh, summery food. The best picnic recipes are quick to prepare so you can get on your way and will stay fresh in a cooler while you're traveling to your picnic spot. Try these picnic recipes for a great picnic lunch of salad, sandwiches and dessert.
1. Watermelon and Feta Salad
You will need:
- 5-pound Watermelon
- 1 small Red Onion
- 4 ounces Feta Cheese
- 1/2 cup Extra-Virgin Olive Oil
- 1/4 cup Red Wine Vinegar
- 2 tablespoons chopped fresh Mint
- Salt and Pepper to taste
- Remove the rind and seeds from the watermelon. Cut into 1-inch cubes into a bowl.
- Peel and slice the red onion and add to the bowl.
- Crumble the feta cheese over the watermelon and red onions.
- In a seperate bowl, slowly whisk the olive oil into the vinegar to emulsify it. Add the mint and salt and pepper to taste.
- Toss the dressing with the watermelon, onion and feta.
2. Smoked turkey wraps
You will need:
- 2 teaspoons Curry Powder
- 2 teaspoons Lemon Juice
- 1/2 cup Mayonnaise
- Lavash (Flatbread) Wraps
- Thinly sliced Smoked Turkey
- Romaine Lettuce leaves
- Thinly sliced Avocado (optional)
- Thinly sliced Mango (optional)
- Thinly sliced Cucumber (optional)
- Toast the curry powder in a heavy skillet over low heat, stirring constantly, for about two minutes. Toasting brings out the flavor of the spices and makes them fragrant.
- In a bowl, stir the toasted curry powder together with the mayonnaise and lemon juice to make curry mayo.
- Spread the mayo on the lavash.
- Add the smoked turkey, lettuce, avocado, mango, and cucumber and roll into a delicious wrap.
3. Gingersnap Sandwich Cookies
You will need:
- Cream Cheese, softened
- Lemon Curd, jarred or homemade
- Gingersnap Cookies, store-bought or homemade and cooled
- Mix equal parts cream cheese and lemon curd until smooth.
- Spread the lemon curd filling on gingersnaps and make sandwiches.
- Refrigerate the sandwich cookies overnight to soften.
