Roasted Asparagus Recipes

It can be difficult to find delicious roasted asparagus recipes partly because asparagus is not usually associated with delicious meals; these recipes will change that. Now more than ever people are searching for healthy alternatives to higher calorie meals-this is where vegetables are making a name for themselves and these recipes will prove worthy. These aren't your grandmas recipes, they pack a flavorful punch like no other. Whether preparing as a snack a side dish or a main course, these asparagus recipes will liven up even the simplest meals.

Garlic Roasted Asparagus

  • 2 pounds asparagus
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons minced garlic
  • 1 teaspoon Salt
  • 1 teaspoon freshly ground black pepper
  1. Preheat the oven to 425 degrees F.
  2. Mix the asparagus, olive oil and garlic.
  3. Place in a large glass baking dish.
  4. Season lightly with salt and pepper, and toss.
  5. Bake until the asparagus are tender and lightly browned, fifteen to twenty minutes.

Roasted Asparagus

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  1. Preheat the oven to 400 degrees F.
  2. Place the asparagus on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss.
  3. Roast the asparagus for fifteen minutes.
  4. Cool slightly and serve warm or at room temperature.

Parmesan Roasted Asparagus

  • 2 1/2 pounds fresh asparagus
  • 2 tablespoons olive oil
  • 1/2 teaspoon  salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  1. Preheat the oven to 400 degrees F.
  2.  Lay the asparagus in a single layer on a sheet pan and drizzle with olive oil.
  3. Sprinkle with salt and pepper.
  4. Roast for ten minutes.
  5. Sprinkle with parmesan cheese.
  6. Return to oven for five to ten minutes.
