Strawberry Cupcakes Recipes

Here are three fabulous strawberry cupcake recipes and a wonderful cream cheese frosting to go along with them. Strawberry cupcakes are so delicious and are perfect for Valentine's Day. These wonderful strawberry cupcake recipes can be used for any holiday, event or just dessert for a wonderful meal. 

To make this strawberry cupcake recipe you will need:

  • two cups all purpose flour
  • stick butter
  • two eggs
  • cup half/half
  • 1 1/4 cups sugar
  • teaspoon baking power
  • 1/4 teaspoon salt
  • teaspoon vanilla extract
  • 1/2 cup strawberry jam
  1. In a bowl, place the flour, salt and baking powder. Sift the dry ingredients before using.
  2. In a stand mixer put the butter and beat until fluffy. Add in the sugar and mix well.
  3. Add in the eggs and the half/and half. Mix well again.
  4. Add in the strawberry jam and the vanilla extract to the strawberry cupcake batter and mix well. Slowing add in the dry ingredients.
  5. Place paper cups in a cupcake pan and fill half way up with the strawberry cupcake batter. Bake in a preheated 350 degree oven for roughly 25 minutes. When the cupcakes are cool, frost and top with colored sugar crystals.

To make this strawberry cupcake recipe you will need:

  • 1 1/2 cups self-rising flour
  • four tablespoons milk
  • stick butter, room temperature
  • cup white sugar
  • three whole eggs
  • cup frozen strawberries, thawed
  1. Place the butter in a large mixing bowl of a stand mixer. Blend the butter until fluffy.
  2. Add the eggs one at a time, blending well after each egg addition. Gradually add in the sugar.
  3. Add in the milk all at once. Gradually start adding in the flour and mix thoroughly each time.
  4. Add in the strawberries and in the end. Beat the strawberry cupcake batter well, but not too much.
  5. Place some paper cups in a cupcake pan and fill half way up with the strawberry cupcake batter. Bake in a preheated 350 degree oven for 22 to 25 minutes.

To make strawberry cupcakes with strawberry gelatin you will need:

  • small package strawberry flavored gelatin
  • 1/2 cup boiling water
  • three whole eggs
  • cup oil
  • packaged white cake mix
  • cup fresh strawberries (frozen can be substituted)
  1. Place the boiling water in a mixing bowl and add the gelatin slowly. Mixing thoroughly each time.  Set aside.
  2. In a large mixing bowl, add in the cake mix, oil and the eggs. With a mixer, mix slowly. Add in the gelatin mixture to the cake mixture.
  3. Add in the fresh strawberries and mix thoroughly. Place paper cups in a muffin pan. 
  4. Fill the paper cups half way with the strawberry cupcake batter. Bake the strawberry cupcakes in a preheated 350 degree oven for 22 to 25 minutes or until the cupcakes are done. Frost the cupcakes when cool. Place a fresh strawberry on top of each cupcake.

To make strawberry cupcake frosting you will need:

  • two packages softened cream cheese, room temperature
  • three cups confectioner's sugar, sifted twice
  • teaspoon strawberry extract
  1. Place the softened cream cheese in a mixing bowl. With a mixer, blend the cream cheese until fluffy.
  2. Slowly add in the confectioner's sugar. Scraping the bowl periodically.
  3. After all the sugar is mixed with the cream cheese, add in the strawberry extract. Decorate the strawberry cupcakes with fresh fruit or dyed sugar.
