Summer Pasta Salad Recipe

Classic Macaroni Salad

Ingredients:

  • 3 cups cooked macaroni (small elbow type)
  • 2 hard-boiled eggs, chopped
  • 2 stalks celery, chopped
  • 3 green scallions, chopped
  • 3 small gherkins, chopped
  • 1/2 cup mayonnaise
  • 1/2 teaspoon Dijon mustard
  • Salt and Pepper

Directions:

  1. In a large bowl put the macaroni, eggs, celery, scallions and gherkins. Add in the mayonnaise, mustard and seasoning.
  2. Mix the salad until all the ingredients are covered equally. This wonderful summer pasta salad is a tradition in most households for picnics and barbeques.

 

Penne Pasta with Broccoli Florets

Ingredients:

  • 3 cups cooked penne pasta
  • 1 cup of chopped broccoli florets
  • 1 green scallion, chopped
  • 1 cup bean sprouts
  • 1 carrot, peeled and shredded
  • 1 green pepper, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped coriander
  • 1/2 teaspoon ground dill seeds
  • 1 teaspoon soy sauce
  • Salt and Pepper
  • Sesame seeds for garnish

Directions:

  1. In order to make this very delicious summer pasta salad, place the pasta, broccoli, scallion, bean sprouts, carrot and green pepper in a bowl. Make the dressing with the mayonnaise, soy sauce, coriander leaves, dill, salt and pepper.  
  2. Pour the dressing over the summer pasta salad and mix well. Place the completed summer salad in a decorator round plate and sprinkle with the sesame seeds.

Turkey Tri-color Pasta Salad

Ingredients:

  • 2 cups cooked tri-color spirals
  • 1/2 cup cooked turkey, chopped
  • 1 bell pepper, chopped
  • 1 scallion, chopped
  • 1 tomato, chopped
  • 1/3 cup mayonnaise
  • Salt and Pepper
  • 1/3 cup chopped walnuts

Directions:
