- Prepare the vegetables. Slice the broccoli lengthwise into 1/2 inch strips. Slice the red peppers into 1/2 half inch strips 4 inches long. Cut the tops of the scallions and slice in 1/2 inch strips 4 inches long. Are you seeing a pattern here? If you said yes: all veggies are about the same size. You're right.
- Crush two gloves of garlic in a garlic press. Peel a chunk of ginger that will fit in the garlic press and press it too. You might only get ginger juice out but that's okay. Set the garlic and ginger aside. Garlic and ginger are important ingredients for many vegetarian Chinese food recipes.
- Mix 1 tsp of cornstarch in 1 cup of low sodium chicken broth. Add 1 tsp soy sauce, 1/2 tsp sesame seed oil, 1/2 - 1 tsp of cayenne pepper. Set aside.
- Get wokking. Heat the wok then add 2 Tbsp of cooking oil. Wait until a haze forms over the oil. You do not want the oil to smoke. Add the vegetables. Stir fry for three minutes using two spatulas to lift the food from the bottom of the wok to the sides of the wok, turning the food over as you go. - Add the garlic and ginger. Stir fry for 20 seconds.
- Spice things up. Add the chicken broth mixture. It will thicken almost immediately.
